Fresh, Organic Summer Pasta Salad

It's that wonderful time of year- BBQ's, showers, brunch, birthdays and any other occasion to get together for a picnic style gathering.

I often find myself wondering what to bring that's fresh, healthy and delicious. Surprisingly, this salad encompasses a complete meal AND it's very low in fat calories :)

I'm happy to share it with you...
(All ingredients organic and from a local farm produce stand if possible)

1 lb of pasta, cooked and cooled
1 pint of mult-colored cherry or grape tomatoes, cut into halves
2 hard boiled eggs, chopped
3/4 cup of feta cheese, crumbled
1 small cucumber, cubed
1 tbsn e.v. olive oil
1 tbsn white vinegar

*Toss together after the pasta and eggs have cooled
*I used Collezione pasta noodles in this recipe.
*refrigerate for at least 1 hour
